Gin & Tonic Bundt Cake

This is actually a pretty easy recipe and absolutely perfect for summer.


1 big lemon (juice and zest)

2 eggs

3/4 cup vegetable oil

3/4 cup white sugar

1 tbsp vanilla extract

3 cups flour

2 tsp baking powder

2 tsp baking soda

1/2 tsp salt

2/3 cup gin

3/4 cup tonic water (not flat)

To start off, preheat the oven to 180°C and spray bundt pan with cooking spray.
Grate zest and squeeze juice from the lemon and set aside.
In a bowl beat the egss, oil, sugar and vanilla until smooth. Add flour, baking powder, baking soda and salt to the mixture and continue to mix on a low setting.
Gradually add lemon juice (about 1/4 cup), gin and the zest. Remove bowl from the mixer and fold in the tonic water with a spatula.
Pour the batter into the pan and bake for about 40 minutes, or until an inserted toothpick comes out clean.

For the icing I simply mixed icing sugar with a bit of gin until I had the desired consistency. Sprinkle some lemon zest for decoration. Done.
